Filling:
- 2 Tablespoons ground flax with 6 Tablespoons water (or whatever you use normally as an egg replacer for 2 eggs), mixed
- 2 8oz packages vegan cream cheese
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 3/4 cup coconut cream
- 6 oreos, chopped
Crust:
- 17 oreos, smashed really well
- 2 Tablespoons vegan butter, melted
- 1 Tablespoon ground flax with 3 Tablespoons water, mixed
Preheat your oven to 325 Fahrenheit. In a 9 inch pie pan, mix the smashed oreos, butter, and flax/water. Form into a crust in the pan. Don’t worry about making it perfect, it looks better rustic anyway. Put this in the freezer while you make the filling.
Beat the cream cheese until soft, then slowly add in your sugar and other wet ingredients. Just beat it for a couple minutes, then add in your chopped oreos. Pour the filling into the crust gently (there’s gonna be a little extra filling so don’t overfill the pan), then bake for 35-40 minutes. Take it out and let it cool for an hour or so, then put it in the freezer for an hour, then the fridge for 4 hours or overnight, and that’s it! You can top each piece with some whipped soycream and an oreo if you want to be fancy
